Shiage Toishi (Finishing Stone)
This beautiful finishing stone produces knife sharpness, rust resistance and an aesthetic appeal that a natural stone can only produce.
This stone is harder than Shirosuita and produces less mud. But this unique stone creates more kumori (cloudy finish) which makes the hamon more visible and clearer.
Also and more importantly this gives you a sharp knife for precision, better tasting food and stunning food presentation.
It is manually mined by Mr. Youzou Tsuchihashi and expertly selected through his years of experience.
He told me that although people in the western world have known Japanese knives for quite a while, they haven't really paid much attention to the unique beauty and overall performance of natural sharpening stones.
