A retired Master blade smith from Echizen - Kintaro forge who have been creating high quality blades for decades. He was awarded the "Yellow Ribbon" from the Japanese government as a recognition of his efforts and as an important craftsman of the present world.
This knife is definitely one of the thinnest grinds I have seen which would be a breeze to cut produce. The knife has a nice taper from 4mm thickness from base then thins out to 1mm, 1inch from the tip. Light and nimble and a nice d shaped handle makes this knife a great knife for big batches of vegetable prep.
